Greek Veggie Power Bowl

2 cups riced cauliflower
About 4 – 6 tablespoons Italian dressing
Tablespoon dried oregano
2 cups cooked lentils
1 cup chopped cucumber
1 cup chopped tomatoes
6 Tbsp sliced Kalamata olives – or whatever looks good
6 Tbsp crumbled feta cheese – or whatever looks good

Tossed cooked cauliflower with dressing and oregano. Arrange in bowl with lentils, cucumbers, tomatoes, olives and cheese. - serves 4 (maybe)
